Yields 6-9 bars | 5 minutes prep, 25 minutes to cook
Ingredients
2 cups rolled oats
1 and 1/3 cup mashed ripe banana (about 3 large bananas)
6 T water
½ tsp salt
3 T pure maple syrup (or agave, honey, or Stevia equivalent)
3 T oil, nut butter, seed butter, OR additional water
1 tsp. pure vanilla extract
Optional toppings: chocolate chips, raisins, chopped nuts, coconut shavings
Instructions
Preheat oven to 350 F
-Line an 8 x 8-inch pan with parchment paper, or grease well
Stir all ingredients together and smooth into the prepared pan
Sprinkle desired toppings over smoothed batter
Bake for 20 minutes. Do NOT open oven, but turn off heat, and let bars sit for additional 5 minutes inside oven
After the additional 5 minutes, pull out bars. Slice once bars have cooled.
Store in the fridge for 3-4 days or cut and store in an airtight container separated by parchment paper and freeze for up to three months.
