Yield: Approx 12 (1/2 cup portions) 

This bean salad is great a side dish to take for parties or make ahead on the weekend and use as a side dish throughout the week.  Packed with vitamins, minerals, fiber, and low in calories and fat to promote heart health.

Ingredients: 


1 lb Green Beans
15oz drained Kidney Beans
15oz drained Lima Beans
1 sliced Red Bell Pepper
1 cup minced Red Onion
½ cup Extra Virgin Olive Oil (EVOO)
½ cup Cider Vinegar
1 tsp Sea Salt
½ tsp Black Pepper
½ cup minced Parsley
3 cloves pressed Garlic

Directions: 

Fill the bottom of the steamer with 2 inches of water. While steam is building up in the steamer, cut ends off green beans. Steam for 5 minutes. A fork should pierce them easily when done. 
Transfer to a service dish.
Add drained kidney and lima beans, sliced red bell pepper, minced onion.
Toss with olive oil, cider vinegar salt, pepper, minced parsley and garlic.  
Let mixture marinate overnight.
