Ingredients: 

4 boneless skinless chicken breasts (sprinkle salt and pepper to your preference)
½ cup Jamaican Jerk sauce, add two chili peppers if you like more of a spicy flavor
4 cups of organic wild rice blend (cooked to your preference)
1 large carrot -shredded
1/2 cup chopped cauliflower
½ cup chopped broccoli
¼ cup chopped green onions -chopped
1 cup frozen/thawed edamame beans            
2 cups of shredded purple cabbage
½ sliced yellow bell peppers
Sesame seeds to garnish
 

Instructions: 


1. Place chicken on baking sheet, Brush with Jamaican Jerk sauce
3. Bake for 25 minutes at 350 degrees until insides are no longer pink 
4. generously brush chicken again with Jerk sauce, leave it in oven for 3 minutes
4. Remove chicken from oven and cool
5. Cut chicken into slices
6. In a large bowl add one cup of rice, top rice with chicken and add piles of vegetables and edamame
8. Garnish with green onions and sesame seeds
8. Serve and enjoy
